Kabusecha Akamine
Japanese Green Tea from Uji, Kyoto prefecture.
Kabusecha literally means "covered tea". The origin of the name comes from the way of the processing. About a week before the picking tea leaves are covered to be protected from the direct sunlight. Thanks to this method the taste of kabusecha is milder than usual sencha. It has a sweet taste behind the bitterness and refreshing flavor.
How to make:
Tealeaves: 5 g / 2 teaspoons
Water: 150 ml, 70 °C
Steeping time: 1,5 min.
Tealeaves can be steeped three times.
Good to know:
- Make your tea with soft water!
- After the first steeping, use warmer water
- The hotter water, the more bitter tea
- The longer steeping time, the more concentrated flavor of tea
- The more water, the milder tea
